BBQ Peanut Butter Chicken

I'm planning to fire up the grill tonight on this summer-like day. We'll be having grilled peanut butter chicken, a recipe I found on the lid of a Smucker's peanut butter jar a few years ago. The recipe makes enough marinade for two meals. In fact, tonight I'll be using marinade that I had previously frozen when I made this meal a few months ago. If you like peanut butter, you'll love this. Enjoy!

BBQ Peanut Butter Chicken

1 cup peanut butter

¼ cup soy sauce

¼ cup white wine vinegar

¼ cup lemon juice

6 cloves garlic, minced

1 teaspoon red pepper flakes

¾ teaspoon ground ginger

2 ½ pounds boneless skinless chicken breast, cut into strips


· Mix ingredients (except the chicken) in a blender until combined.

· Add one cup of water to thin. Mix again.

· Marinate chicken for at least 2 hours.

· Grill until chicken is cooked through (about 8 minutes).

Serves 8.

  1. Can you substitute other nut butters? (Cashew for example?)

    What about in PB cookies?

  2. I believe the consistency is similar and substitutions could be made which would, however, change the taste. One of my daughter's used to be allergic to peanuts (and still is allergic to other nuts) so it was a real celebration when she could join us in eating this meal. If you are worried about food allergies, consult with your allergist about safe substitutions.
